2008 Dayi "Springtime Rain" Raw Tea Cake 500g
This cake is unique in that all of the leaves used in its production were picked during the month of March, 2008. Normally Dayi mixes leaves from different months and even years to create a cake of tea. Leaves picked in the spring are allowed to grow for the longer period of time than other pickings during the year. The leaves and buds are hit by less strong sunlight and the air is foggy and damp, which allows for a wonderful aromatic quality of the leaves which transfer to the flavor and aroma of the brewed tea. Spring picked tea leaves are the most desirable of all the pickings each year.
